One of my favorite soups is French Onion soup. If we are at a restaurant and they have it on the menu, there is no need for me to look any further because that's what i'll order. I had never made it before, because well, I always thought it was a soup that was a really really long process to make. But it really isn't. Brian and I both had a craving for it one afternoon, so I decided to give it a try. This recipe is SO easy and it's delicious.
Here are your ingredients:
5 tablespoons of butter
8 large onions, fairly thinly sliced
2 tablespoons sugar
2 tablespoons garlic
1 envelope of Lipton Beefy Onion mix
3 cups beef stock
2 cups chicken stock
Provolone cheese (to top soup with)
Slices of crusty bread
salt & pepper to taste
Pre-heat oven to 450 degrees.
In a large pot over medium high heat, melt your butter and then add your onions, salt, pepper and sugar.
Make sure to stir often and your onions will begin to caramelize. This is the process that takes a bit. It takes anywhere from 30-40 minutes to get your onions to that golden brown carmely color.
When you first start you'll think "Wow there is a lot of onions!" But they cook down very quickly. Once you get your onions cooked down quite a bit, add the packet of the beefy onion soup mix. Continue to cook that and 2 tablespoons of garlic for a few minutes.
Then add your beef and chicken stock.
Bring this to a bubble, and then reduce the heat to low and allow to simmer for 10-15 minutes.
Next, laddle into oven safe dishes and top your soup with a slice of crusty bread and a slice of provolone cheese. Put your dishes on a cookie sheet and place them into your pre-heated oven long enough to melt the cheese and toast the top. Usually around 5-6 minutes.
