Happy Wednesday

Happy Wednesday Friends!!
Can you believe that tomorrow is Thanksgiving?!?!  Crazy!  I cannot believe how fast the month of November has gone by.  I just have a short post today =)
Emma has been super busy with swimming after school.  She has been having a hard time with the diving aspect of it.  Like a really hard time.  But they have been working with her one on one and it's getting a lot better than it was.  She still has some practice to do, but I'm proud of how far she has come since she started.

Yesterday we woke up to our first snow fall of the season.  Yay.  Can you sense the sarcasm here?  ha!  It wasn't much, just a dusting, but Alyx was alllll about it!  She was so excited about it =)

Yesterday I spent the day packing snacks and getting the girls new DVD players hooked up in the car for our drive.  2 more days!
We do leave on Friday, but we won't get to Florida until Sunday.  To say we are excited is an understatement!  We cannot wait =)  All of us =)
After today I probably won't be posting every single day, but I certainly will when I am able to.  I hope you all have a fantastic Thanksgiving with your family and or friends!!!

hello Monday

Happy Monday Friends!!  I hope you all had a great weekend.  Ours was pretty low key, since it was both my and Brian's weekend to work.  Can you believe this is Thanksgiving week?!?  Wow did that sneak up on us f-a-s-t!!  We have such a crazy busy week and since I realized this weekend that I never shared Alyx's 3rd Birthday, I figured I would do that today =)

A couple of weeks ago our little peanut turned 3 years old.  I still don't even know where the time has gone.  It's crazy.

This was the first time Alyx has ever been excited about gifts.  Like she was sooo excited!  The pictures will for sure tell =)

Every single gift she opened she got sooooo giddy and screamed with excitement!
It was way too cute =)

She really enjoyed getting into the gifts that were wrapped. She LOVED tearing the paper open =)

When I asked her what she wanted for a party, she kept saying a blue cake.  So a small Finding Dory party it became =)

And of course she loved the cake and it was blue!
So that was good in her book =)

I don't think that smile could get any bigger if she tried!

She became really sober when we were singing Happy Birthday to her.  She would move, smile or laugh.  But she was find when we stopped.

She had a great 3rd Birthday.  It was small and just family but it was perfect!!  Happy Birthday again sweet Alyx =)

Link up below with your Monday post.  Anything goes!

Friday Favorites

Happy Friday Friends =)  I hope you guys have had a great week.  We have around here.  Busy but good!  Today I am linking up of course with Narci, Andrea and Erika for Friday Favorites!
Emma woke up the other day not feeling the best.  Just a cold, but it's kind of kicking her butt a bit.  She got all ready for school and I surprised her with a trip to Tim Hortons for breakfast before school.

A muffin and a hot cocoa.  Perfect for a super chilly morning.

Alyx has been crazy this week!  Maybe she's just excited for Disney?? =)

That's the best smile I could get ;)

Speaking of Alyx.  We took her to her 3 year well child check yesterday.  She did really well and is growing right on target.

She wasn't due for any shots...but she did have the flu shot.  And she seriously just layed there and didn't make a peep.  I was pretty proud of her!

I got us completely packed for our trip the other night.  Minus all our bathroom stuff.

I never ever get packed this early.  However with Thanksgiving next week and me working all this weekend, I knew I should probably get it done.  So I did and it felt so awesome!  Maybe I should always pack this early for a trip =)

And lastly, yesterday was world prematurity day.

It still amazes me every day that Emma was born so early and was so tiny.  But she amazes me every single day how far she came.

I hope you all have a great weekend!!  I'll see you back here Monday!!

Lastly today, Linking up with Karli and Amy =)
Also linking up with Liz, Christina, Natasha, and Darci =)
And lastly, linking up with Katie, Tiff, Della and Caitlin =)

Recipe Club {Shepherd's Pie}

It's Recipe Club day!  I absolutely love this linkup that Heather and do each month.  So many amazing recipes have been shared by all of you.  So today, if you have a recipe, link up with us =)

Today I am sharing my recipe for Shepherd's Pie.  I had never had this until I moved out on my own.  It was nothing my mother ever made, and still to this day I don't think she's ever made it.  But it's so good =)

(I really need to brush up on my food photography skills, ha!)

It's really simple to make.  Start off my preheating your oven to 400f.

1.Dice up your onion.

2.Crumble and cook your ground beef in a large skillet.  Cook until no longer pink.  Add the Worcestershire sauce and garlic powder.  Mix well.  And then add your diced onion.  Cook until the onions are tender.

3. Transfer the beef mixture to a large casserole dish.

4. Top the ground beef with the 3 cans of corn.  I do the cream corn first, and then add the whole kernel.

5. Once your potatoes are done boiling, mash them up and add a little milk and butter.

6. Dollop big globs of the mashed potato over the top and carefully spread it evenly to cover the entire top.  Top with a few tablespoons of butter.  And then bake.

I completely forgot to take a picture of it after it came out of the oven, but it will be nice and golden brown.  You could even put it under the broiler for a minute or two to crisp up the top.

This would be something really easy to make if you have left over mashed potato from Christmas or even Thanksgiving.  You could also add any kind of veggies to it, but we prefer just corn in ours.

I'm excited to see what you all share with us this month.  Remember, anything goes!  Share new or old!
