Recipe Club {Creamy Chicken Marsala}

Did you notice a little change in the blog today?  It's been a long time coming!  I still have a few things here and there to tweak a bit, but I think I'm liking it so far!

I wanted to share with you today a recipe that we made a couple of weeks ago, Creamy Chicken Marsala.



It's a bit time consuming, but it was worth every second making it.

1. In a large skillet over medium heat add 1 tbsp of olive oil to the pan. And I actually added a tiny bit of butter as well.


Add the chicken and lightly salt and pepper both sides.


Cook chicken until lightly brown on both sides and until cooked through.  Remove chicken and set aside on a plate.

In the same pan with all the chicken drippings, and another tablespoon of olive oil.  Add your shallots and garlic.


Cook for about 1 minute, and then add your mushrooms.


Cook mushrooms, onions and garlic together for about 2 minutes.  And then add your Marsala wine.


Bring this mixture to a boil over medium high heat for 1-2 minutes.  You want to cook the alcohol out.

Then add your beef broth, heavy cream and ground mustard.


Bring to a boil, and then reduce the heat and simmer for about 10 minutes or until the sauce thickens slightly.


 After it thickens slightly, return the chicken to the pan.


I served ours with roasted Parmesan Asparagus.


It was delicious and it will definately be on our dinner rotation from here on out! =)
